Chocolate Red Wine Chili
- 1 lb ground beef
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 4 cups canned, diced tomatoes, with their juice
- 2 cups canned red kidney beans, drained and rinsed
- 1 cup hominy, drained and rinsed
- 1 cup black beans, drained and rinsed
- 2 tbsps olive oil
- 2 tsps salt
- 1 tsp black pepper
- 2 tbsps dark cocoa powder
- 2 tbsps chili powder
- 2 tbsps good quality paprika
- 2 tbsps sugar
- 1 tbsp ground coriander
- 1 tsp ground cumin
Chili
Heat a large pot over high heat. When hot, add in 2 tablespoons of olive oil. Add the ground beef and break apart with a wooden spoon. Allow to cook over high heat for 2-3 minutes. Next, add in the “spice blend”, turn the heat down to medium, and season with salt and pepper. Cook until the beef is completely browned, stirring it occasionally. When cooked, remove from pot and strain off the excess fat into a small container. Add the reserved fat back to your large saucepot and return to medium heat. Add in the onion, and garlic. Cook for 2 minutes then add in the remaining ingredients and the cooked beef. Stir well and bring to a simmer. Lower heat and cover; stirring occasionally, for about 1 to 1 ½ hours. Adjust season with salt and pepper if necessary.

- 2 tablespoons good quality paprika
- 2 tablespoons sugar
- 1 tablespoon ground coriander
- 1 teaspoon ground cumin
