Tasting Notes
Invigorating aromas of lemon grass, lime zest and ripe tropical fruit. Elegant and crisp with impressive balance and fresh acid. Good intensity and weight with flavours of grapefruit, lemon, box tree, and passion fruit, leading to a graceful, structured finish. Try this wine with grilled swordfish, Thai green curry, and fresh salads with feta, asparagus, red peppers and mango.
Vineyard Notes
Although the 2019 harvest season in Ontario was delayed due to somewhat damp and cool conditions, overall it was a decent season. We experienced an unusually late start to sparkling harvest this year, with the first fruit harvested in late September from the Claystone vineyard. While ripening took longer than is typical, the quality was exceptional. The balance of the sparkling fruit was picked by late October and certainly showcased terroir driven sparkling’s. There was a strategy at play as to when to pick the Pinot Noir and Chardonnay at their peak before damper, late autumn conditions settled in. Having negotiated this, we expect some classic and elegant wines to follow. As anticipated, Bordeaux varieties hung longer to achieve optimum ripeness.
Production Notes
The fruit for this varietal expresses sauvignon blanc, comes from our tufford road vineyard in the Lincoln Lakeshore appellation. The fruit was destemmed and left on skins for 8 hours prior to pressing and cold fermented at 13 degrees for 20 days.
Winemaker Notes
Mango flesh, gooseberry, pineapple, quine paste, pear drop, river pebbles, and fresh cut grass. Mouth watering acidity, on the palate with lingering mango flesh cut grass in poised balance.
Food Pairing Notes
Pairs well with miso and soy Chilean sea bass, lemon garlic butter scallops, salmon tataki, goat cheese , and peach and arugula salad.
