Tasting Notes
Floral acacia and honeysuckle perfume, Niagara pears and sweet honeydew melon are evident on the nose of this delightful wine. The palate is rife with a chalky acidity balanced with soft pear flesh, lavender and orange peel.
Vineyard Notes
Unpredictable weather presented its challenges over the 2021 harvest. Record setting temperatures, intermittent drought, high rainfall and humidity were prevalent – Niagara saw it all this year. Our vigilant viticulture team persevered through the season to yield some incredible fruit. Despite the demanding conditions, the 2021 harvest proved to be outstanding for aromatic whites like Semillon, Sauvignon Blanc, Riesling and the fruit for sparkling programs. Although the acids were slightly lower than in previous years, reds showed good phenolic ripeness and we anticipate high quality blends from varieties such as Cabernet Franc, Cabernet Sauvignon and Merlot.
Production Notes
The fruit for this elegant Pinot Grigio was harvested from select Niagara Peninsula vineyards. The fruit was destemmed and pressed immediately, then cold fermented at 16° degrees for ten days to create a brilliant, expressive wine.
Food Pairing Notes
This wine is at its best when paired with light, fresh dishes such as spanakopita, linguine alla Vongole, spaghetti carbonara, butternut squash soup, salmon sliders with caper lemon aioli, or a platter of soft, mild cheeses for dessert.
