Tasting Notes
This Icewine exhibits intense layers, in part from its exposure to oak. The peach and apricot aromas and flavours unfold into complexities of marmalade and candied brown sugar. The abundant acidity is softened by oak aging, lending itself to the creamy, vanilla finish.
Production Notes
With the temperature dropping to – 10C the Vidal grapes grown in the Niagara Peninsula were picked and pressed immediately upon arrival at the winery. The viscous juice was allowed to cold settle for 3 days after which time it was racked clean and inoculated with a specific stain of yeast and was fermented in new French Oak at an average temperature of 15C for 16 days. The wine was allowed to age an additional 3 months in oak before racking.
Winemaker Notes
Generous amounts of ripe fruit give aromatics of peach, mango, and orange. Flavours of apricot and citrus with hints of clove and a touch of vanilla make this a classic Niagara Peninsula Icewine.
Food Pairing Notes
Always good with the traditional crème brule and crème caramel; try tropical fruit compote, roasted peaches or pineapple with pana cotta; cheeses from fresh chevre to parmesan with a dribbling of honey; brown butter lobster salad with baby arugula and hazel nuts.

This is the most fantastic ice wine I have ever had the privilege of tasting .smooth ,fruity, melt in the mouth wonderful can't find words good enough to describe. Thankyou for producing it

The 2006 was amazing, with great balance of sweetness and acidity.

The first time I experienced this amazing ice-wine was at Fleur in Las Vegas and it changed my after dinner drink for life, if there was more stars, it would get them!

The best white ice-wine ever! Can't find it at the LCBO at Toronto anymore and have to order it on line.

I had high expectations for icewine but this one took me by complete surprise. I've loved and appreciated wine for years but today I can say I've found my favourite. I'm delighted for finding it.

I am not a conoisseur of ice wine but this bottle is simply something extraordinary in my entire wine tasting experiences. It is as smooth and elegant as you can possibly imagine. It is a dessert in itself although you may wish to pair it with blue cheese, dried fruit or nuts.

I use to buy the Cabernet franc ice wine until we tasted this one. The aroma is wonderful and it’s so smooth. We keep a bottle in the fridge but never lasts long! Fantastic!
