Production Notes
Harvested from a select vineyard in the Niagara Peninsula these grapes were immediately destemmed and crushed into a stainless steel tank. Fermented at an average temperature of 25°C the wine was then pressed off the skins and transferred into both French and American oak where it was aged until ready to bottle.
Winemaker Notes
Aged in French and American barrels, this wine displays warm aromas of vanilla, cocoa and juicy, ripe dark fruit. On the palate rich, concentrated flavours of plum blackberry and black currant are balanced by smooth, silky tannins.

Smoked beef brisket; Sticky BBQ ribs; Penne pasta with a lamb ragu; Wood fired meat lovers pizza with hot Italian sausage; Aged Cheddar cheese.

The 2016 Inniskillin Discovery Series Baco Noir is a very impressive expression of Ontario Baco! Niagara is renowned for producing the finest Baco and this value-priced offering from Inniskillin is a real gem. Blackberry, vanilla bean, pomegranate, boysenberry, leather, and cedar on the nose. Dry, inky, and superbly balanced, the palate is both creamy and refreshing, with a nice blend of sweet and savory making it ideal for enjoying with braised dishes, BBQ fare, or fireside.
