Tasting Notes
Elegant notes of tropical fruit and savoury herbs balance perfectly on this classic Bordeaux style blend. The palate is crisp and fresh with balanced acid, and a bright, lingering-lemon lime finish.
Vineyard Notes
Unpredictable weather presented its challenges over this harvest. Record setting temperatures, intermittent drought, high rainfall and humidity were prevalent – Niagara saw it all this year. Our vigilant viticulture team persevered through the season to yield some incredible fruit. Despite the demanding conditions, the 2021 harvest proved to be outstanding for aromatic whites like Semillon, Sauvignon Blanc, Riesling and the fruit for sparkling programs. Although the acids were slightly lower than in previous years, reds showed good phenolic ripeness and high quality blends from varieties such as Cabernet Franc, Cabernet Sauvignon and Merlot
Production Notes
The fruit for the Semillon portion of this blend came from our prized Delaine Vineyard and was harvested with ripe, classic varietal expression. The Sauvignon Blanc was harvested from the Tufford Road and Montague Vineyards. The fruit was destemmed, pressed immediately and cold fermented at 16 degrees for 10 days. The Sauvignon Blanc was fermented in 100% stainless steel, however the Semillon was barrel fermented in older French oak. The blend of the two has created this incredible Meritage, ready to drink now or allowed to mature.
Winemaker Notes
This elegant wine exhibits aromas of fresh Niagara peaches, floral, mango, paw paw, frangipanni and vanilla bean. Vibrant stone fruit, hints of floral and impressive acidity frame the wine with delicate oak that influences the rich, full mouth feel. Well balanced and lush, supple stone fruit and vanilla round out the lingering finish.
Food Pairing Notes
This crisp, white wine is delightfully approachable. Try it with dishes such as pasta primavera, tuna sashimi, fresh crab, seafood risotto, chicken satay and prawn ravioli. Excellent paired with Gruyere, Ricotta, Pecorino and Gouda cheeses.
